The Ag & Food Lab is growing Colorado’s local food economy—from soil and seed to plate and back to the soil.
We collaborate with farmers, workers, food businesses, and community partners to address gaps and inequities across Colorado’s food systems. Through equitable land access, shared infrastructure, food access, education, and wrap-around support, we cultivate resilient local food systems that benefit farmers, businesses, workers, families, and communities.
Our work connects four integrated programs:
The Farm — 35 acres in Bennett where emerging and historically excluded farmers access land, water, tools, training, and regenerative farm infrastructure.
The Market — SNAP-authorized pop-up markets and no-cost food boxes connecting Colorado producers with families in low-access communities.
The Hub — a 15,000-square-foot Denver warehouse providing cold and dry storage, light processing, and distribution support for small food businesses.
The School — education, internships, service-learning, and cross-sector training cultivating the next generation of food-system leaders.

The Ag & Food Lab was incorporated in September 2023 to address gaps and inequities across Colorado’s food systems. We collaborate with farmers, workers, food businesses, and community partners to test and develop systemic approaches that strengthen the local food economy.
Our work spans land access and stewardship, food security and community access, shared infrastructure and economic development, and education and workforce development. By connecting these areas, we help create resilient food systems that benefit Colorado communities from soil and seed to plate and back to the soil.
